Olive Oil Citrus Cake

Ingredients

1 ½ cups all-purpose flour

¾ cup sugar

½ teaspoon baking soda

½ teaspoon baking powder

½ teaspoon salt

2 eggs

¾ cup good olive oi

l½ cup whole milk or Greek yogurt

Zest of 1 orange

Zest of 1 lemon

¼ cup fresh orange juice

1 teaspoon vanilla extract


For finishing:

Powdered sugar

Flaky sea salt

Fresh orange slices or figs

A drizzle of olive oil


Directions

Preheat the oven to 350°F. Grease an 8-inch cake pan and line the bottom with parchment paper.

In one bowl, whisk together the flour, sugar, baking soda, baking powder, and salt.

In another bowl, whisk the eggs, olive oil, milk or yogurt, citrus zest, orange juice, and vanilla until smooth.
